1 lb spicy Italian sausage Green onions Red and yellow bell pepper Garlic Small wonton squares (found in produce) Olive oil Cream cheese Shredded Colby jack or cheddar Cumin Salt and pepper
Preheat oven to 350. Heat skillet on medium. Dice onion (white part, chive part for topping), and red and yellow peppers. Need about 1/3 cup diced veggies total. Put minced garlic and veggies into pan. Let cook a few minutes then add sausage. Cook until sausage is cooked! Drain well.
Meanwhile prepare wontons. Coat lightly raw wontons with olive oil on each side. DO NOT USE VEGITABLE OIL. It doesn’t cook right. Too much olive oil, the bottoms don’t properly cook. Place coated wontons in a cupcake pan. This helps the wontons keep a bowl shape for filling. Typically makes 24 bowls with filling. Sprinkle each wonton in the pan with salt, pepper and cumin (cumin makes all the difference in this dish!). Bake in preheated oven a few minutes until lightly golden brown and bottoms are bumpy. Take out before the tips are medium brown. Take out to fill.
Spoon a small amount of cream cheese in bottom of each wonton. Put sausage filling in next. Top with shredded cheese. Bakeon broil until cheese melts. Be very careful, tips of wontons can burn easily. Just a few minutes, if that. Top wontons with fresh chives from remaining onions. Pull out of cupcake pans and enjoy!
